The discovery of the Fifth flavor. Coffee or pork?

Imagine an icon of simplicity, a widely used food which is prepared in a multitude of recipes: the pig. Perpetual takes nothing for granted, so we don’t forget the basics and traditions of cooking. Our idea is to take this suckling pig and turn it into an emotion, looking for an innovative flavor.

Marinating, long cooking at low temperature is the technique we use.

A coffee bean from the Blue Mountains of Jamaica is used in our innovative and unique recipe, which encapsulates the tastes of the new cuisine and the new flavors of today from which our coffee cream is created and spread in the center of the dish, where the boneless suckling pig with crispy skin is spread out.

Sautéed Bieta is laid down along with its crispy coating, waiting for the pork sauce to pour over the whole mixture and make an average dish a superlative treat.
